Fresh red meat and poultry sit in the narrowest practical band in food transport: 0°C to +2°C. Below zero the surface begins to freeze and drip loss on thaw damages appearance and weight; above +4°C bacterial growth accelerates fast enough to shorten shelf life measurably within a single delivery round.
Frozen meat is more forgiving on precision but less forgiving on interruption. Partial thaw and refreeze produces ice crystals and visible drip in the packaging, and a receiving butcher or supermarket will reject on appearance alone regardless of what the log says.
